Hospitality builds are driven by service flow

A restaurant or supper club is designed backwards from how service actually works. The route from kitchen to pass to table, the position of the bar relative to the room, where servers stage and where guests queue, and how staff move during the busiest hour all dictate the plan long before finishes are considered. A room that photographs well but forces staff to cross the guest path during service will frustrate the operator every night it is open.

Getting that right means building from the operator's service model rather than from a generic layout. Seat count, the bar's role in the room, and whether the venue shifts from dining to late-night use all change the plan — and a venue that does both has to work in two configurations without feeling like a compromise in either.

Bar and back-of-house servicing

The bar is the most services-dense element in a hospitality interior. Water supply and drainage, refrigeration, glass-wash, power for equipment, and drainage falls all have to be resolved in coordination with the millwork, because a bar is essentially a services cabinet with a finished face. Back-of-house carries its own requirements — ventilation, grease management, floor finishes and drainage that satisfy health regulations, and durable wall surfaces in the wet and hot zones.

Acoustics, lighting, and atmosphere

Atmosphere in a hospitality room is largely an acoustic and lighting outcome, and both are construction decisions. Hard surfaces look sharp and make a room deafening at capacity; the balance between hard and absorptive surfaces is set during the build. Lighting needs to be layered and properly controlled so the same room can carry an early dinner service and a late-night crowd, which means the circuiting and control scheme have to be planned during electrical rough-in, not chosen at fixture selection.

Building on Granville Street

Granville Street is one of Vancouver's most demanding construction environments: a dense entertainment strip with heavy pedestrian traffic, neighbouring venues operating late, constrained street access, and very little room to stage materials or park equipment. Deliveries have to be timed, the site secured, and noisy work scheduled around the businesses on either side. Downtown hospitality projects are as much a logistics and permitting exercise as a building one.
